The Mint Chocolate Chip Popsicles became a symbol of summer in Green Valley, a treat that locals and visitors alike looked forward to as the days grew longer and the nights warmer. Clara had not only created a delicious popsicle but had also crafted a piece of summer that could be held in hand - a reminder of the simple joys that the season.

Instructions. In a medium pot, heat the salt, sugar, and coconut milk over a medium-low heat, stirring occasionally. Once the mixture is gently steaming take it off the heat and add the mint leaves. Set aside for 30 minutes. Place a strainer (sieve) over a medium bowl and pour the coconut milk mixture through it to remove all the mint leaves.

Begin by soaking your cashews and dates with just enough water to cover them in a bowl. Soak for at least 2 hours or overnight. Strain the cashews and dates and add to a blender along with coconut milk, matcha, vanilla extract, and peppermint extract. Blend until silky smooth - about 1- 2 minutes on high.

Add banana, avocado, spinach, mint, vanilla, and milk to a blender. Blend until completely smooth and no flecks of spinach remain. Stir in chocolate chips. Freeze the popsicle mixture using the ZOKU quick pop maker or other popsicle molds until solid. (See popsicle mold instructions for more details on freezing time.)

Instructions. Place the cashews in a heatproof bowl, cover with an inch or two of boiling water, and soak 1 hour. Meanwhile, combine the sugar and 1 cup water in a small saucepan and bring to a boil, swirling to dissolve the sugar. Add the mint leaves, remove the pot from the heat, cover and steep 5 minutes.
