Fig and Ginger Jam is a game changer, perfect as a spread, or as a filling in desserts. This has fast become my favourite jam recipe, it's unique, flavoursome, has a great texture, and is quick to make as figs don't have the high water content most berries have. Cut the figs into quarters and put them in a pot with the rest of the ingredients. Stir the ingredients vigorously ( mash them even! ) and place the pot on high heat.

2 tsp freshly grated ginger. Place all the ingredients in a big pot. Bring to the boil to dissolve the sugar. Then simmer, stirring regularly for about 1 hour or until thick and syrupy. Test a small amount on a cold saucer to see if it sets. Remove the vanilla pod and cinnamon stick. Mash the figs slightly if preferred. Spoon into sterilised jars.
